This cauliflower salad recipe is a great substitute when you are wanting the texture and flavor of traditional potato salad without all the empty starchy carbs!
Fold in chopped hard boiled eggs, celery, onion, green onion, crumbled bacon, mayo and mustard. Mix ingredients well but don't over do it , or you will have cauliflower mash.
Place in fridge for at least a few hours. You can make this ahead of time and leave your self more time on bbq day.
Serve chilled and enjoy.
