This paleo egg salad tastes just like the traditional. Perfect to keep on hand for a quick and easy lunch!
Ingredients
12 dozen hard boiled eggs
1 c paleo mayo
1 T mustard
½ red onion, diced
½ c diced cucumber
4 pieces chopped cooked turkey bacon
Sea salt and black pepper to taste
Instructions
Add chopped eggs, cucumber, onion, mayo, mustard, bacon, sea salt and pepper to a large bowl. Fold and combine well. Cover and chill for 2 hours. Serve with cucumber slices or lettuce leaves.
