Turkey Bacon Egg Salad

This paleo egg salad tastes just like the traditional. Perfect to keep on hand for a quick and easy lunch!
Ingredients
  • 12 dozen hard boiled eggs
  • 1 c paleo mayo
  • 1 T mustard
  • ½ red onion, diced
  • ½ c diced cucumber
  • 4 pieces chopped cooked turkey bacon
  • Sea salt and black pepper to taste
Instructions
  1. Add chopped eggs, cucumber, onion, mayo, mustard, bacon, sea salt and pepper to a large bowl. Fold and combine well. Cover and chill for 2 hours. Serve with cucumber slices or lettuce leaves.
