Featured Recipe: Twice Baked Breakfast Potatoes

Serves: 4
- 2 large sweet potatoes
- 4 eggs
- 4 pieces cooked turkey bacon diced
- ¼ yellow onion diced
- 2 green onion/chive stalks sliced
- 1 t parsley
- ½ T olive oil
- Sea salt and black pepper to taste
- Preheat oven to 400F.
- Wash potatoes and place in preheated oven for 1 hr.
- Remove and allow to cool.
- In small skillet heat olive oil over medium heat.
- Add onion, sea salt, pepper and cook 2 minutes.
- Stir in chopped bacon.
- Cook 3-4 minutes and allow flavors to blend.
- Slice potatoes in half length wise and scoop out a good portion in center of potato. Repeat.
- Add potato meat to skillet bacon mixture.
- Combine well.
- Place skins on baking sheet.
- Scoop mixture back into potatos and make a dent in the center for your egg.
- Crack egg into middle of potato.
- Place back in oven for 12-15 minutes or until desired wellness is reached.
