Featured Recipe: Twice Baked Breakfast Potatoes

  • 2 large sweet potatoes
  • 4 eggs
  • 4 pieces cooked turkey bacon diced
  • ¼ yellow onion diced
  • 2 green onion/chive stalks sliced
  • 1 t parsley
  • ½ T olive oil
  • Sea salt and black pepper to taste
  1. Preheat oven to 400F.
  2. Wash potatoes and place in preheated oven for 1 hr.
  3. Remove and allow to cool.
  4. In small skillet heat olive oil over medium heat.
  5. Add onion, sea salt, pepper and cook 2 minutes.
  6. Stir in chopped bacon.
  7. Cook 3-4 minutes and allow flavors to blend.
  8. Slice potatoes in half length wise and scoop out a good portion in center of potato. Repeat.
  9. Add potato meat to skillet bacon mixture.
  10. Combine well.
  11. Place skins on baking sheet.
  12. Scoop mixture back into potatos and make a dent in the center for your egg.
  13. Crack egg into middle of potato.
  14. Place back in oven for 12-15 minutes or until desired wellness is reached.
