Grilled Sweet Potatos

- 2 lbs Japanese sweet potato
- 2 T olive oil
- Sea salt and pepper to taste
- 1 lemon zested and juiced
- ¼c chopped basil
- ¼ c parsley
- 2 T grated romano cheese
- sea salt and pepper to taste
- Preheat grill.
- Wash, peel and cut potatoes ¼ inch thick
- Toss them with olive oil salt and pepper and place on grill.
- Mix dressing by combining zest of lemon, juice of 1 lemon, basil, parsley, romano cheese, olive oil salt and pepper.
- After potatoes are grilled and cooked through, toss with dressing and serve.
