Paleo Sticky Rolls

These paleo sticky rolls filled with cinnamon and nuts are so delicious that you won't believe that they are grainless!!
Ingredients
Dough:
  • 1 T coconut oil, melted
  • 2 T pasture butter, melted/soft
  • 1 egg
  • 1 T raw organic honey
  • 1 t vanilla extract
  • 1 c almond flour
  • ½ c hazelnut meal
  • 1 T coconut flour
  • 1 t baking soda
  • Pinch of salt
  • 1 t cinnamon
Filling:
  • 1 T cinnamon
  • 3 T pure maple syrup
  • 1 T pasture butter
  • ¼ c pitted Medjool dates, finely chopped
  • ¼ c walnuts or pecans, finely chopped
Glaze:
  • 2 T pure maple syrup
  • 1 T raw organic honey
  • 2 T pasture butter, softened
  • Pinch of cinnamon
  • ¼ c chopped pecans or walnuts
Instructions
Dough:
  1. Preheat oven to 325F.
  2. Whisk together all wet ingredients in a small bowl.
  3. Pour wet ingredients into dry ingredients and mix until well blended.
  4. Form dough into a ball.
  5. Roll dough between 2 pieces of wax paper into rectangle shape. Shape up the sides and remove and uneven areas.
  6. Place dough on baking sheet and place in freezer for a few minutes while you make filling.
Filling:
  1. Place in food processor and blend well. It will have a rough texture to it and be extremely sticky.
  2. Remove dough from freezer, and smear filling across dough as evenly as possible. Don't scrape the dough and try to be gentle.
  3. Take end of long side and begin to fold or roll up. Use the wax paper to help you do this. Pull, lift, roll.
  4. Place in freezer and let set 10 minutes to firm up your roll.
  5. Remove from freezer and slice into ½ inch pieces.
  6. Place in preheated oven for 11-13 minutes. While cooking, prepare glaze.
Glaze:
  1. Combine ingredients.
  2. When cooking complete add glaze immediately. This will give you warm rolls with soft insides and a nice crust on the outside.
