Carrot Rice

Serves: 4
- 4 large carrots, peeled and grated
- 1 teaspoon minced garlic
- ½ cup sliced leeks
- ½ cup & 1 tablespoon vegetable broth
- 1 tablespoon lemon juice
- Pepper to taste
- 1 teaspoon parsley, chopped
- In pan add garlic and leeks and cook for one minute
- Add carrots and lemon juice and cook for 1 minute
- Add broth and let reduce until liquid is fully absorbed
