Paleo Tortillas

You won't miss the grains with this paleo tortilla recipe! They are fabulous!!
  • 2 eggs, whisked
  • 1 c of full fat coconut milk
  • 1 T of olive oil
  • ¾ c of tapioca flour
  • 3 T of coconut flour
  • 1 t sea salt
  • ½ t paprika
  1. Mix and whisk all wet ingredients.
  2. Mix all dry ingredients.
  3. Mix wet ingredients into dry until well blended.
  4. Heat skillet or flat top griddle med-low heat.
  5. Brush with butter and pour batter onto hot skillet.
  6. Make sure to thin out batter to make larger tortilla
  7. Brown tortilla on both sides and place on paper towel lined plate.
Makes 4 (8-10 in.) tortillas
