Grainless Cornbread

This grain-free "cornbread" is an excellent substitute for traditional cornbread. For a delicious breakfast, warm and drizzle with honey. For a more savory side dish with a little spice, try adding pepper and jalepeno.
Ingredients
  • 1 c almond flour
  • ½ c coconut flour
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 6 eggs
  • 8 T pasture butter, melted
  • 3 T raw honey
  • 1 c coconut milk
Instructions
  1. Preheat oven to 350F.
  2. Combine dry ingredients in a medium mixing bowl.
  3. Add wet ingredients to bowl, and whisk together.
  4. Line a 9 in x 9 in glass dish with parchment paper, and fill with batter.
  5. Bake for 30-35 min until top is lightly browned, and toothpick comes out clean.
