Paleo Pumpkin Pecan Breakfast Muffins

These pumpkin muffins make for the perfect autumn breakfast or on-the-go snack!
Ingredients
  • 1 c almond meal
  • ½ c ground pecans
  • ½ c pumpkin puree
  • 3 eggs at room temperature
  • ¼ c maple syrup
  • 1 T ground cinnamon
  • 1 T ground nutmeg
  • ⅛ t all spice
  • 1 t ground ginger
  • 1 t ground cloves
  • ½ t baking soda
  • ¼ t natural sea salt
  • coconut flakes or chocolate chips, optional topping
Instructions
  1. Preheat oven to 350F and place paper liners in muffin tin.
  2. Combine all ingredients in a mixer bowl and beat until smooth.
  3. Spoon batter into muffin tins.
  4. Bake for 10 minutes.
  5. Remove from oven.
  6. Serve with some pasture butter, and enjoy!
