Beef, Pepper, & Mushroom Kabobs

Beef kabobs are a great option for summertime cookouts. This particular recipe uses honey and mustard for a unique tangy flavor.
Ingredients
  • 1- 1½ lb boneless top sirloin steak, cut 1¼ in thick
  • 2 T olive oil
  • 1 T lemon juice
  • 1 T water
  • 2 t Dijon-style mustard
  • 1 t honey
  • ½ t dried crushed oregano leaves
  • ¼ t pepper
  • 1 medium green, red, or yellow bell pepper, cut into 1¼" pieces
  • 12 large mushrooms
Instructions
  1. Cut steak into 1¼" strips.
  2. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in a large bowl.
  3. Add beef, bell pepper and mushrooms, stirring to coat.
  4. Alternatively thread beef, bell pepper, and mushroom on each of four 12 in metal skewers.
  5. Place kabobs on racks on broiler pan or grill and cook for 8-10 minutes from medium rare to medium doneness, turning occasionally.
