A perfect meal for summer parties with friends that has a zesty kick.
Ingredients
4 boneless, skinless chicken breast halves
3 large bell peppers, any color
1½ Tablespoons chili powder
1 teaspoon cumin
1 teaspoon ground oregano
1 teaspoon garlic salt
4 limes, juiced
Chipotle salsa
Mixed greens
Instructions
Rinse chicken and pat dry. Remove stem and seeds from peppers and cut into quarters.
In a small bowl, combine chili powder, cumin, oregano and garlic salt; sprinkle over both sides of chicken and on inside of peppers.
Place on a grill over hot coals and cook until chicken is no longer pink inside and peppers are lightly charred.
Baste chicken and peppers with lime juice and salsa during cooking. Remove chicken and peppers from grill. Cut into bite-size strips and place atop mixed greens Makes 4 servings.
